Cha Cha Cha Chia..no not the pet! The pudding, silly!

In our house we really don’t snack, we eat at meal times….for the most part. I may like to have a chia pudding for part of breakfast or maybe a dessert for dinner because it’s just that versatile and easy to just keep in the fridge. It’s fully of yumminess and just takes a couple minutes to put together. It can be done with any liquid you choose! I choose full fat organic canned coconut milk, but unsweetened almond milk, coconut milk from the carton, whole milk and even water. So here’s what you need: Milk of choice, chia seeds, cinnamon and no sugar sweetner(optional) and a jar or other container to mix it in.

Canned coconut milk will get really thick as the liquid and the cream separate. This is totally normal and is great for making whipped cream. For this however you will use both the cream and water so you will stir it all up.

Once the milk is stirred up pour it into your container and add the chia seeds. I add 3 tbsp, you can add to taste. Chia seeds absorb a lot of liquid so don’t add too much. Add your cinnamon to taste, I find 1/4tsp is good for me. If you’re using a sweetner put it in now as well. Sometimes I will do a flavored chocolate raspberry stevia drops. Stir really well, cover and leave sit.

After an hour I give it a good shake shake shake to break up any clumps and stick it in the fridge for a couple hours to over night. Then enjoy as you like, it will keep for a few days.
